Green Seasoning… You know the meat loves a rub.

Tonight I had to finish my review for a book titled; The Spice Necklace by Ann Vanderhoof.

While it wasn’t the best recipe in the world, it wasn’t the worst either. It is worth another shot, and some fine tuning.

Here is the recipe I used, adapted of course, since I don’t have  a food processor. I have a  pestle. A little old fashioned I know, but gets the job done.

You will need; 2 large green onions, some fresh parsley leaves, and 4 cloves of garlic. Mince them all up. Then add 1 tsp salt, almost a tbsp of thyme, and about 3 tbsps of white vinegar. Mash it up real good. (This is where my pestle came in handy, or use a food processor if you have one.) Then chill the mix.

After at least an hour, grab the meat of your choice, (we love steaks here), and rub the meat generously but not covered. You should have some mix left over from 2 large steaks.

Sprinkle with red hot chili flakes. And grill them bad boys. The grill takes some of it off, but them’s the breaks.

I trim the fat after cooking. Just looks pretty on the plate, only reason I show it. It looks great with my rice & peas. Have to give you that trade secret another time.
